For the past dozen years, I’ve been in a constant whirlwind of activity—between my kids, my pets, and my overactive imagination, there’s never a moment of solitude. But soon, that’s all about to change.

In just a week, school starts and my kids will be off to class. For many parents, this might not feel like a groundbreaking event, but for me, it’s incredibly thrilling! After eight years of exclusively homeschooling, venturing into a classroom environment is a brand-new experience for us.

Sure, we’re enrolling in a homeschooling co-op (yes, that’s a thing!), so my kids will only attend classes a couple of days a week. They’ll be with other kids who also homeschool, which means they can relate to the joys of doing schoolwork in pajamas or even while dressed as superheroes (not that this happens regularly… but you never know).

I’m absolutely excited for them; this is going to be a fantastic adventure! But let’s not forget about my excitement—what will I do with all this newfound free time? Hours of solitude! It’s almost like learning to ride a bike again.

With my kids’ meals already planned out, I figured it was time to plan some delicious lunches for myself:

  1. Diner Delight
    Imagine enjoying a leisurely lunch at a diner—no crayons or kids’ menus in sight! Just me, a plate of my favorite comfort food, and the freedom to scroll through my phone without interruptions.
  2. Gourmet at Home
    Or, how about staying in and whipping up something I truly love? Picture baked garlic brussels sprouts, tangy spiced sauerkraut, and a side of gluten-free pumpernickel topped with roast beef and provolone. Ah, the joy of a well-made sandwich!
  3. Solo Picnic
    What if I took a book to the park and actually read it? I mean really read—no distractions. Just me and the words, soaking in the sunshine. Sounds heavenly!
  4. Pub Escape
    What if I popped into a local pub to catch a random soccer game while munching on lamb burgers wrapped in lettuce and crispy steak fries? A cold Sam Adams to wash it down? Yes, please!
  5. Lunch in Bed
    And finally, what if I indulged in lunch in bed—complete with my own bag of Doritos and a refreshing Stewart’s Orange Creme soda while binge-watching Dexter?
