Yesterday marked a milestone—little Liam turned five! While I wasn’t quite ready for him to grow up, his birthday request for an ice cream cake was something I couldn’t refuse. After all, when your child asks for a treat, you deliver.
My husband, Alex, has fond memories of a dessert from his childhood called “Yodel Pie.” True to family tradition, it was a simple creation made with just three ingredients: Yodels, ice cream, and hot fudge. Although it sounded delicious, I believed I could elevate it. Instead of reaching for jarred hot fudge, I whipped up my own from scratch. I also had vanilla ice cream and some Oreos on hand, so I crushed them up and mixed in an abundance of Oreos, far more than you’d find in any store-bought version. Let’s just say, this dessert could be considered a heart attack in a bowl!
I wish I could share a taste with all of you; it’s truly a game changer. If you’re ready to give it a try, here’s what you’ll need:
- Two boxes of Yodels (or Swiss snack cakes), each sliced into six pieces
- Two gallons of your favorite ice cream, softened
- Homemade hot fudge (you could use two jars, but homemade makes all the difference! It only takes five minutes.)
Homemade Hot Fudge Recipe:
- In a saucepan, simmer 1 container of sweetened condensed milk, 1 bag of semi-sweet chocolate chips, 1 square of unsweetened baking chocolate, and 1 tablespoon of butter until melted.
- Stir in 1 tablespoon of vanilla extract. That’s it!
Now, it’s time to layer! Start with a layer of Yodels, followed by the ice cream, then drizzle with hot fudge. Repeat these layers until you reach the top of your dish, sprinkle any leftover chocolate flakes from the Yodels on top, and pop it in the freezer for a couple of hours to set.
The kids absolutely savored every bite, and even Alex was licking his plate clean! They’ve already requested that I whip up this ice cream cake for every birthday celebration this year. Honestly, it’s a dream come true because there’s no risk of ruining it by frosting too early.
