This morning brought a wave of longing for the weekend, and yet it’s only Wednesday. With two more days to go, the amount of work ahead feels like an eternity. Not that I mind—my job keeps me engaged, but this week is definitely a busy one. So, I thought it would be fun to create something a bit different for dinner, something that screams weekend indulgence. I’m talking about brunch-style delights!
French toast has been a cherished favorite since I was a child. Whenever I have a breakfast craving, French toast is my go-to. But, of course, this wasn’t going to be your average French toast. I like to think outside the box. Enter the decadent berry French toast cups, perfectly portioned so there’s no need to share—a blessing in our household, where everyone has their berry preferences. Personally, I adore blackberries while my kids shy away from them, opting for strawberries instead. These individual cups allow us to be as picky as we want!
The recipe is refreshingly straightforward. It starts with a custardy mixture poured over cubes of day-old bread. I have a soft spot for day-old bread; it’s economical and versatile. Berry French Toast Cups

Ingredients
- 16 large eggs, beaten lightly
- 1 loaf of day-old bread (I used Italian), cubed
- 1 stick of butter, melted
- 1 cup light cream
- 1/2 cup brown sugar
- 2 tsp vanilla extract
- 1 cup fresh berries (your choice)
Instructions
- Preheat the oven to 350ºF. Line a muffin pan with liners or grease the muffin tin directly.
- In a large mixing bowl, whisk together the eggs, cream, melted butter, brown sugar, and vanilla until well combined.
- Pour the egg mixture over the cubed bread, gently tossing to ensure all pieces are coated.
- Fill each muffin cup halfway with the bread mixture, then place some berries in the center.
- Top with more bread cubes until the muffin cups are full. Add a few more berries on top.
- Bake in the preheated oven for 40 minutes or until golden brown and the egg is set.
