Dinner in 90 Seconds: Quick Meal Ideas for Busy Parents
You can whip up a decent meal in just 90 seconds—yes, really! Here are some of my favorite quick ideas. (Many of these rely on pre-washed arugula from Trader Joe’s, which, while not gourmet, is super convenient.)
- Grab a slice of bread and slather on a generous amount of mayonnaise so that some Trader Joe’s arugula will stick. Layer with deli roast beef and a slice of cheese (pre-sliced is totally fine). Add mustard if you like. Enjoy it as is or go all out with another slice of bread for a sandwich. And if someone ever tells you that making homemade mayonnaise is easy, feel free to roll your eyes at them.
- Swing by a Chinese restaurant and pick up some rice. Open a can of salmon, place it on the rice, drizzle with olive oil and a sprinkle of salt, then top with a handful of Trader Joe’s arugula!
- Heat up some refried beans with cheese in the microwave, mix in salsa, and wrap it all in a tortilla that you’ve warmed over a burner.
- Microwave some rice with shredded cheese. It won’t rival risotto, but it’s close enough that no one will complain.
- Toast some bread, spread on butter, and add slices of avocado with a pinch of salt. Simple and delicious!
- Visit your local grocery store and pick up a rotisserie chicken. Devour it with your hands while sipping white wine from a mug—because who needs fancy glasses?
- Salads can elevate any meal and are a great way to ensure your kids are eating something green. For a super easy salad, toss some Trader Joe’s arugula in a bowl, drizzle with olive oil and vinegar, and enjoy. (And honestly, salad tongs are overrated; a regular fork will do just fine.)
If someone claims cooking is soothing, ask them if it’s as calming as sipping a beer while watching Black Sails.
