Quick and Easy Dinner in 90 Seconds

You can whip up a completely decent meal in just 90 seconds! Here are some of my favorite fast options. A lot of these ideas feature ready-to-use arugula from Trader Joe’s, which, while not the fanciest, is super convenient.

  1. Arugula and Deli Sandwich: Spread a generous amount of mayonnaise on a slice of bread to help some Trader Joe’s arugula stick. Layer on some deli roast beef and a slice of cheese (pre-sliced cheese works just fine!). Mustard is optional. If you’re feeling indulgent, add another slice of bread to make a sandwich. And if someone tells you making homemade mayo is easy, kindly suggest they try slapping a wall instead.
  2. Salmon Rice Bowl: Pick up a container of rice from your favorite Chinese restaurant on your way home. Open a can of salmon, place it on top of the rice, drizzle with olive oil and salt, and toss in some arugula for good measure.
  3. Refried Beans in a Tortilla: Microwave some refried beans with cheese until gooey. Mix in salsa and serve it in a tortilla that you can heat up over a burner for a bit of extra flair.
  4. Cheesy Rice: Microwave some rice and mix in grated cheese. While it may not rival a gourmet risotto, it’s tasty enough not to raise any complaints.
  5. Avocado Toast: Toast some bread, slather it with butter, then top with slices of avocado and a sprinkle of salt.
  6. Rotisserie Chicken: Swing by the store and grab a rotisserie chicken. Enjoy it straight from the container, and why not sip your white wine from a mug to keep things casual?
  7. Quick Salad: Salads can elevate any meal and ensure your kids get some nutrition, even if you’re not in the mood to cook. For a quick salad, toss some Trader Joe’s arugula in a bowl, drizzle with oil and vinegar, and enjoy. (By the way, salad tongs are overrated—who needs them?)
