Almond and Strawberry Salad

I usually steer clear of food at large potlucks. The thought of unfamiliar people cooking dishes in kitchens I don’t know sends shivers down my spine. When I do indulge, I opt for items that need minimal tasting and finger-dipping, like salads and layered dips. You would never catch me trying meatloaf or chili from someone I don’t know. I’ve got my quirks, I admit.

At a bridal shower once, I encountered a delightful almond and strawberry salad crafted by a stranger. Not only did I enjoy it, but I also tracked her down for the recipe! It’s incredibly simple and utterly delicious. The sweetness of the strawberries, the crunchy nuts, and the garlic-infused dressing create a magical blend. It’s perfect on its own or topped with my amazing chicken salad.

Ingredients for the Salad:

  • 5 oz container of mixed greens
  • 1 box of strawberries, sliced
  • 1/2 cup sliced almonds, toasted

For the Dressing:

  • 1/2 cup vegetable oil
  • 1/4 cup red wine vinegar
  • 6 tablespoons sugar
  • 2 cloves garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika

Instructions:

Simply blend the dressing ingredients in a blender and toss with the greens, strawberries, and almonds. That’s all there is to it. Yum!
