Simple Banana Pudding Recipe
Lifestyle
If you haven’t yet explored Savannah, Georgia, make sure it’s on your list of must-visit destinations! I spent two delightful years there after college, and I’d jump at the chance to go back. The vibrant food scene, stunning historical architecture, and friendly locals create an experience like no other – oh, and did I mention the food? One of my sweetest culinary discoveries during my time in Savannah was none other than banana pudding.
You’ve heard of this classic dessert, right? It’s hard to forget once you’ve tasted it. The combination of creamy pudding, ripe bananas, crunchy vanilla wafers, and whipped cream is pure bliss. Banana pudding is truly the epitome of dessert comfort food.
While I’ve made banana pudding from scratch, taking the time to whip the cream by hand, a couple of years back I decided to go for a more laid-back approach. You won’t believe it, but everyone seems to love this simpler version even more!
The Lazy Cook’s Simple Banana Pudding
Ingredients:
- 2 packages (1 oz each) of instant vanilla pudding
- 2 overripe bananas
- 1 container of thawed whipped topping
- 1 package of vanilla wafers
Instructions:
- In a large bowl, prepare the instant pudding according to the package directions for pie filling. Once set, gently fold in the whipped topping and refrigerate.
- Slice the bananas into ½-inch thick rounds.
- In a 2-quart casserole dish, lay down a layer of vanilla wafers. Next, add a layer of banana slices, followed by a ½-inch layer of the pudding mixture. Continue layering until you run out of ingredients, ensuring that the final layer is pudding.
- Want to get fancy? Serve individual portions in ramekins for a delightful treat!
Refrigerate for at least 4 hours, but let it sit overnight if you can. Trust me, the flavors deepen, and the wafers become soft, delicious bites of vanilla goodness!
Note: If you’re looking for a diabetes-friendly version, it’s simple! Swap in sugar-free pudding, sugar-free whipped topping, and sugar-free vanilla wafers. If you can’t find the sugar-free wafers, Murray’s sugar-free shortbread cookies work wonderfully too.
