Ice Cream Cone Cake: A Sweet DIY Adventure

Forget whipped cream as a topping; I wanted something more creative! I decided on crushed waffle cone pieces drizzled with chocolate ganache. And since I was having fun with this, I topped the cake with real ice cream cones. The beauty of making your own cake is that you can go wild with your ideas!

To keep the cones stable, I snipped off the bottoms so they could be anchored into the cake. After positioning the cones, I decorated the cake with splattered chocolate-covered cone pieces. Once I was satisfied with the presentation, I placed it in the freezer to set overnight. Just before serving, I scooped some ice cream into the cones and added whipped cream, sprinkles, and cherries on top.

So, what was the final cost? Just over $14! Not only did I spend less than on the store-bought cake, but this creation looked and tasted a million times better—plus, it definitely earned some oohs and aahs from my friends! Ingredients:

  • 2 packages of Oreo cookies (14.3oz each), filling removed
  • 6 Tbsp butter, melted
  • 2 cups crushed waffle cone pieces plus 2 whole waffle cones
  • 6 oz semi-sweet chocolate morsels
  • 5 Tbsp light cream
  • 8 cups of your favorite ice cream, divided (4 cups per layer) and softened
  • Whipped cream, sprinkles, and cherries for garnish

Instructions:

  1. In a food processor, grind the Oreo cookies until they resemble breadcrumbs. Set aside three cups for the crust and reserve the rest.
  2. Combine the three cups of Oreo crumbs with melted butter and press the mixture into the bottom and sides of a 9″ springform pan.
  3. Spread four cups of ice cream evenly into the crust and sprinkle with two cups of Oreo crumbs, pressing down firmly.
  4. Smooth another four cups of ice cream over the crumbs.
  5. Snip off the bottoms of two waffle cones (about 1 inch) and gently press them into the cake.
  6. Prepare the crushed cone pieces by melting chocolate and cream together over low heat, then splatter over the cone pieces and freeze them briefly.
  7. Pile the chocolate-covered cone pieces around the inserted cones and return the cake to the freezer for at least four hours.
  8. Just before serving, scoop ice cream into the cones and garnish with whipped cream, sprinkles, and a cherry.
