The Ultimate Ice Cream Cake

Yesterday was Liam’s fifth birthday, and although I didn’t quite approve of him growing up so fast, my little one had a specific request: an ice cream cake. And when it comes to my baby, his wish is my command.

For years, my partner Mark has reminisced about a dessert from his childhood called “Choco Pie.” It was a simple creation made with just three ingredients: chocolate cakes, ice cream, and warm fudge sauce. While it sounded delicious, I knew I could elevate it. Instead of reaching for store-bought fudge, I opted to whip up my own. Plus, I had vanilla ice cream and a stash of Oreos, so I crushed those up and enhanced some Oreo ice cream with a generous amount of crushed cookies—definitely a treat that’s a heart attack in a bowl.

I wish you could all savor it because it truly is something special. If you’re curious to try it, here’s what you’ll need:

  • Two boxes of Choco Cakes (or any chocolate snack cakes), each cut into six pieces
  • Two gallons of your favorite flavor of ice cream, softened
  • Hot fudge sauce. While you can use store-bought, I recommend making it homemade—it only takes five minutes!

Homemade Hot Fudge Recipe:

Simmer 1 can of sweetened condensed milk, 1 bag of semi-sweet chocolate chips, one unsweetened baking chocolate square, and 1 tablespoon of butter until melted. Stir in 1 tablespoon of vanilla. That’s all!

Now, it’s time to layer. Begin with the chocolate cakes, then add the ice cream, followed by the hot fudge. Repeat this process until you’ve filled your bowl. Sprinkle any chocolate flakes that fell off while slicing on top, and then pop it in the freezer for a few hours to set.

The kids enjoyed it so much that they licked their plates clean—even Mark! They’ve already requested that I make this cake for every birthday this year, which works for me since it’s hard to mess up!
