Ingredients:
- 16 oz. (2 cups) 4% milk fat cottage cheese
- 1/2 cup ricotta cheese (whole or skim)
- 1/4 cup grated parmesan cheese
- 8 oz. package shredded mozzarella cheese
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1/3 cup fresh Italian flat-leaf parsley, chopped
- 2 cups fresh spinach, chopped
- 32 oz. jar of your favorite spaghetti sauce (I love Rao’s Roasted Garlic Sauce)
- 16 oz. package of uncooked lasagna (Mafaldine, which is like a skinny lasagna, works beautifully!)
- 2 teaspoons olive oil
- 1 teaspoon Italian seasoning
Instructions:
- Preheat your oven to 375°F.
- In a bowl, mix together the cottage cheese, ricotta, parmesan, and half of the mozzarella with the egg, salt, and pepper.
- Stir in the parsley and spinach into the cheese mixture.
- Spread 1/3 of the spaghetti sauce on the bottom of a baking dish.
- Layer uncooked pasta over the sauce evenly.
- Add half of the cheese mixture on top of the sauce.
- Repeat steps 4-6 until you reach the top of the dish.
- Pour remaining sauce over the top and sprinkle with the rest of the mozzarella cheese.
- Drizzle with olive oil and sprinkle with Italian seasoning.
- Cover tightly with foil and bake for 35 minutes.
- Remove the foil and bake for an additional 20 minutes until the cheese is golden and bubbly.
- Let it rest for 30 minutes before serving.
Make-Ahead Tip:
Prepare the recipe but skip baking. Seal it airtight and refrigerate for up to two days or freeze for up to three months. To bake from the refrigerator, let the lasagna sit at room temperature for two hours before following the baking instructions. If frozen, thaw in the fridge for six hours before baking.
